Yesterday I had mentioned in passing that I might make a cabbage casserole today, which was why Isaac was yelling. Plus it's written on a lunch menu. Instead I was reading a book, not making a casserole that he wouldn't eat. My plan was to make the casserole today, but then I didn't feel like it. It will become my lunch several days this week, but it's not a big deal. I have other things here to eat.
In an effort to create world peace, I just put this bad boy in the oven. Isaac is happy to set the timer on his iPad so he knows when to take it out of the oven. Then we take it out again, add cheese, and put it back in.
Does anyone have an adult son who busts your butt about making cabbage casserole? If so, let's talk. I love this guy so much. Sometimes, though, I'd like to be a little spontaneous with my food prep.
On the bright side, this cabbage casserole looks a bit disturbing, but it's amazing, kind of a lasagna with cabbage noodles. And Isaac is happy not to eat it.
